This carrot cake version of the homemade oreos is perfect. Just substitute a box of Carrot Cake Mix for the devil's food cake mix. It goes great with the cream cheese icing. We made a batch of each flavor for a couple barbecues...they're just so easy to make, it's great for feeding a crowd.
