And so begins the I-eat-dinner-in-the-dark series. With some very tasty
Stir-Fried Ginger-Basil Chicken with Tinkerbell Peppers & Coconut Rice. That eggplant was
perfect. The chili sauce was
perfect. And I could eat that coconut rice all by itself.
Summer Ratatouille & Parmesan Polenta with Heirloom Eggplant & Garlic-Cheese Toasts. Surprisingly filling. And intense amounts of leftovers.
This
Spiced Meatballs with Garlic Toasts & Summer Squash Salad wouldn't have been so bad if it hadn't given both of us digestive issues. I liked the squash salad, but I don't know if it was the culprit or the meatballs.
