Lots of winter squash, lots of winter squash recipes! Having a handful of Long Island Cheese Pumpkins on hand, I attempted this soup recipe from EdibleEastEnd meant specifically for them. Aaaaand...let's just say Long Island Cheese Pumpkins are very sweet and not really meant for such savory dishes. ONLY PIES (and dips, and puddings, and rolls, and cakes...)
Honestly, the Long Island Cheese Pumpkin smells and tastes a bit like melons! I will not be making this soup again!
