Awhile back I promised a review of SmittenKitchen's couscous and feta-stuffed peppers. Well. They're tasty. Not mind-blowing, but tasty and filling. They're of medium labor intensity, and the recipe is really a rather simple concept that can be easily modified to fit whatever ingredients may be lurking in your fridge.
It's worth noting that these are pretty decent for making ahead. You prep the peppers and couscous ahead of time (maybe the night before), and then do the veggies right before stuffing, baking, then serving.
I would apologize for the photos, but I can't always eat/photograph my food during daylight hours. Life happens.
