When you're burrowed into the depths of your winter apartment, just a quick recipe from [mostly] canned veggies to get you through the season.
(makes 8 hearty servings)
1 Spanish Onion - minced
2 Green Peppers - diced
2-4 Cloves of Garlic - minced very very small
2 Large Cans Crushed Tomatoes
2 Small Cans Dark Kidney Beans (drained)
2 Small Cans Light Kidney Beans (or chili beans) (drained)
1 Small Chili Powder (2 oz?)
Directions
Heat a little vegetable oil up. Put the green peeper, onions in, let the onions turn brown. Add the garlic, stir for about two minutes. Add cans, stir. Add the chili powder. Stir. Let simmer for 45 minutes (or until orange bubbles form), stirring often.

Hey Iris---thanks so much for stopping by today and for the link on that microloan article. It's so easy to see only the upside of initiatives like that, and it's great to get some info on the downside.
And on a lighter note, this chili sounds awesome! chili is one of my faves, especially in the winter with some nice hot cornbread on the side. I'll have to give this recipe a try!
