'Threw together some frozen soup vegetables and 1 lb. of hamburger meat for this shepherd's pie from TheKitchn along with rainmelon. Next time I would use less potatoes and more meat (the recipe recommends 1.5 lbs). It freezes well and is pretty simple.

...and it also freezes well. I think I still have some in the freezer. 'Wonder if it's still edible...
