I've recently forgotten all about pasta. I'm not sure why, it's pretty darn simple to put together something decent. This lemon pasta with spinach & peas recipe from TheKitchn is not time intensive, and it comes out rather tasty. It's a good opportunity to buy some funky-shaped pasta. Oh, and a tip for re-heating: since this dish is cream-based, it's best to sprinkle a tablespoon (per serving) of milk over it before reheating in the microwave. The cream tends to solidify on the bottom of the container when in the fridge, so it might also serve you well to stir it a bit before reheating.
When in doubt, multiply the quantity of veggies by 1.5. This dish could handle a lot more peas and spinach.
