A half batch of PuttingUpWithErin's Maple Pickled Beets. Although I used peeled shallots instead of pearl onions, because that's what I had on hand. We'll see how they taste. At the moment, I think canned beets can't possibly be worth the effort required to peel them. I mean, first you have to boil or roast them, then you have to use a paper towel to scrub the skins off. It takes awhile and makes a tremendous mess. Your cuticles will be died pink for several days.
Ordinarily, I don't find beets something to get excited about so it's not difficult to keep my expectations checked.
