This broccoli cheddar soup from SmittenKitchen is fantastic, but you really need to make a double batch. It only makes about 4 helpings, which is just too much effort...and soup should be pretty easy to mass produce. Next time!
Also, I'm pretty sure you could double the proportion of carrots and you'd still be at delicious level. In case sneaking carrots into your diet is a side goal.
This one's a keeper.
[Edit: Have since made this soup a second time as a double batch. It should be noted that if you're going to amp up the vegetables, cheese also needs to be increased.]
