As stated previously, these Chewy Chocolate Gingerbread Cookies from Joeycake are fabulous. Yes, the dough requires two hours of refrigeration, but they're worth the wait. Especially if you appreciate chunks of fresh ginger punching you in the tongue while being simultaneously seduced by pockets of melty Scharffen Berger semisweet chocolate chunks. Um, yes.
The recipe only yields 2 dozen, so it's not like you'll be drowning in cookie fats from one go. Definitely and highly recommend.
