I've recently discovered loaded baked potatoes as a meal. Like, totally overcome with vegetables loaded. Here's some inspiration for your own, although I prefer to stick to toppings that can be tossed into fried rice or on top of fajitas or breakfast burritos. Garlic kale, red wine broccoli, truffle salt broccolini, roasted green beans, etc. etc.
But to each their own.
