Egg Bake with Leftover Vegetables

I threw some leftover Blue Apron veggies into one mini-cocotte and sauteed up some mushrooms, broccoli, etc. for the other cocottes. Mixed two eggs into each and baked at 350 for 25 minutes, or until the tops were slightly golden. Easy peasy, done.
