I first made TheKitchn's Very Simple Dal Palak awhile back, and decided to give it another go. This time I modified the recipe in the following ways: 3 large potatoes (instead of 2 medium), 15oz of spinach (part fresh, part frozen), 1 green pepper, half cup extra water, some additional lentils, additional sprinkles of spices, etc.
This caption should read: TOO MUCH SPINACH!!!!
This is one of those recipes that you can pretty much throw anything into the pot and just sort of go by taste to get it right. It's nice to have a base recipe to start with. I now have tasty leftovers for weeks. Weeks and weeks and weeks.
