A fantastic dish from,
TheKitchn: Pork Loin and Onion Jam. And a side of roasted vegetables, because I can't not. I've made the pork several times now. It's simple and comes out perfect every time. It's not the dried out sandpaper pork loin of the old days.
I used
oven-roasted peach butter instead of apricot jam. The onion jam was good, but I think I'd prefer a slather of horseradish sauce.
