Summer Vegetable Gnocchi with Sweet Corn, Bell Pepper & Basil
It's hard to go wrong with pasta mixed up with some sauteed vegetables and cheese, as in this dish, Summer Vegetable Gnocchi with Sweet Corn, Bell Pepper & Basil. No leftovers.

Basque-Style Lamb & Beef Piperade with Sweet Peppers & Garlic Rice
The Basque-Style Lamb & Beef Piperade with Sweet Peppers & Garlic Rice was also pretty good and filling. Made 2.5 me-meals.

Chilled Chicken Ramen with Fresh Noodles, Summer Beans & Tomato
I also liked the Chilled Chicken Ramen with Fresh Noodles, Summer Beans & Tomato, although there were way.too.many tomatoes and the cucumbers were intensely vinegar-y. Otherwise, cold noodle bowls actually make really good sense for taking to lunch. Cold soba is super easy to make and TheKitchn has lots of ideas for what to put on top.
