It's hard to go wrong with pasta mixed up with some sauteed vegetables and cheese, as in this dish,
Summer Vegetable Gnocchi with Sweet Corn, Bell Pepper & Basil. No leftovers.
The
Basque-Style Lamb & Beef Piperade with Sweet Peppers & Garlic Rice was also pretty good and filling. Made 2.5 me-meals.
I also liked the
Chilled Chicken Ramen with Fresh Noodles, Summer Beans & Tomato, although there were way.too.many tomatoes and the cucumbers were intensely vinegar-y. Otherwise, cold noodle bowls actually make really good sense for taking to lunch. Cold soba is super easy to make and
