I don't recommend photographing mashed potatoes at night. Bue here we are anyways. It tastes great. Basically, these fall-infused mashed potatoes from AllRecipes are just plain mashed potatoes with 1Tbsp Dijon mustard, and several spoonfuls of roasted winter squash.
I used half my roasted Blue Hubbard Squash for the main dish, and the other 8lbs of roasted vegetable were scooped out and used for a variety of other purposes...such as these mashed potatoes!
All part of this well-rounded dinner!
