Brisket Tacos with Pickled Onions and Green Onion Slaw

Yet another recipe I've been making for decades. I like to make all three of these recipes together, all from Smitten Kitchen. So it'd be handy to store them all on the same page!

Southwestern Pulled Brisket (Slow Cooker)

Ingredients
  • 3 pounds beef brisket
  • Kosher salt
  • Freshly ground black pepper
  • 2 Tbsp vegetable oil
  • 5 cloves garlic, peeled and smashed
  • 1 large onion, halved and thinly sliced
  • 1 Tbsp chili powder
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1/4 cup apple cider vinegar
  • 1 to 1.5 cups water
  • 1 (14.5 oz) can whole peeled tomatoes, with their juices
  • 2 bay leaves
  • 1/4 cup molasses
  • Optional: 1 to 2 chipotle chiles en adobo, from a can [to taste] (I'm a spice weenie)
Directions
  1. Heat a large, heavy skillet over medium-high heat.
  2. Add the oil and heat just until beginning to smoke.
  3. Add the meat and cook, turning once, until browned on both sides, about 10 minutes total. Don’t skimp on the browning.
  4. Transfer the meat to the slow-cooker.
  5. Add garlic, onion, chili powder, coriander, cumin, and 1 tsp salt to drippings in the skillet and stir until fragrant, about one minute.
  6. Add vinegar and boil until it’s almost gone (get your head out of the way of the steam), scraping the bottom of the pan with a wooden spoon.
  7. Stir in 1.5 cups water.
  8. Crush the tomatoes through your fingers into the slow cooker; add the tomato juices, chipotles, bay leaves, and molasses. Pour this mixture over the brisket in the slow cooker.
  9. Cover the cooker, set it to Low, and cook the brisket until it pulls apart easily with a fork, about 8 to 10 hours (check it at 8 hours, but a thicker piece might need up to 10 hours).
  10. Optional: Remove the brisket and use two forks to pull it apart. Discard bay leaves and use an immersion blender to puree the sauce. Taste and adjust seasonings. Return the brisket to the sauce and serve as is.

Green Onion Slaw

Ingredients
  • 1 c green onions, coarsely chopped
  • 1/4 cup red wine vinegar
  • 1-2 serrano chiles (I'm a spice weenie)
  • 2 Tbsp mayonnaise
  • Salt and pepper, to taste
  • 1/2 c pure olive oil
  • 1 head purple cabbage, finely shredded
  • 1 small red onion, halved and thinly sliced
  • 1/4 cup chopped cilantro leaves (on the side, depending on diner preference)
Directions
  1. Blend green onions, vinegar, chiles, mayonnaise, salt, pepper and oil in a blender until emulsified.
  2. Place cabbage and red onions in a bowl, add the dressing and stir until combined.
  3. Fold in the cilantro and season with salt and pepper to taste.

Pickled Onions

Ingredients
  • 1/2 c red wine vinegar (or half red / half white)
  • 1/2 c cold water
  • 1 heaped Tbsp kosher salt
  • 1 Tbsp sugar
  • 1-2 shots hot sauce (I'm a spice weenie)
  • 1 red onion, sliced into very thin rings
Directions
  1. Make ahead! The night before, or ~8 hours to let it sit and absorb!
  2. In a small bowl, combine red wine vinegar with water.
  3. Stir in salt, the sugar, and the hot sauce.
  4. Add the sliced onions and let sit for at least one hour.

Making Canneles de Bordeaux: Attempt 2 Making Canneles de Bordeaux

I got a wild hare to make Cannelés de Bordeaux, a sort of fiddly French pastry. I used the recipe from Eat Live Travel Write as she did some extensive testing with molds, preparations, recipes, etc. The first batch (shown in the bottom row below) was a pretty good success, despite accidentally forgetting to turn the temperature down to 400-degrees! The second batch (shown above) was more brown, less black. There should be a bit of black - but I think I might like even less. And batches 3-6 (shown in the first row below) turned out the best. I've put in my minor adjustments into the recipe below.

Tasty, crunchy exteriors and soft custardy interiors. What's not to love?!

Cannelés de Bordeaux

Makes 16 cannelés

Ingredients

  • 2c (500 ml) milk
  • 2Tbsp (27 g/ 1/4 stick) unsalted butter
  • 1c (200g) sugar
  • 1c (150g) all purpose flour * (I've used bread flour with some adjustment, below)
  • 2 eggs
  • 2 egg yolks
  • 1/4 c (60ml) dark rum (or rhum)
  • 3tsp pure vanilla extract
  • Melted unsalted butter, small amount for the mold

Directions (day before)

  1. Bring milk and butter to a boil in a saucepan. Remove from the heat and cool slightly, stirring occasionally to reduce some heat.
  2. Mix sugar, flour, eggs and egg yolks in a small bowl until a soft paste-like consistency.
  3. Pour in the milk mixture whisking gently with a fork until you have a smooth liquid.
  4. Add the vanilla and rum and give it one last stir (don't whisk air into the batter).
  5. Using a wire strainer, strain the batter over a glass container (preferably something pour-able), cover with plastic wrap, and refrigerate 12-24 hours.

Directions (ready to bake)

  1. Preheat oven to 450˚F (230˚C).
  2. Brush silicone molds with a little melted butter. Coat the molds sparingly and turn the molds upside down over a paper towel to drain excess butter from inside. Set aside (at room temperature).
  3. Remove batter from fridge, give it a stir and set aside.
  4. When the oven reaches temperature, stir batter one final time and pour into the molds at about 3/4 full.
  5. Place the silicone molds on thin baking tray and bake at 450˚F (230˚C) for 30 minutes.
  6. Reduce heat to 400˚F (200˚C), cover with foil, and bake for 30 more minutes.
  7. * If using bread flour, skip the next two steps, and simply bake for an extra 5-10 minutes in the mold.
  8. After 30 minutes, remove tray from oven. Carefully flip the cannelés out of the molds onto a cool, thin baking tray so they are right side up. They should slide right out of the molds.
  9. Bake for 5-9 more minutes, depending on your preferred darkness.
  10. Remove tray from oven, place on a wire cooling rack until reaching room temperature.
  11. Best eaten the day they are made (after about 2 hours at room temperature). They can be kept in an airtight container overnight but they lose some of their crunchy exterior.

Cocolate Zucchini Bread

When you grow 1-2 zucchini plants, then you end up with lots of zucchini bread. This chocolate zucchini bread from Sally's Baking Addiction has been an absolute staple. I usually make a double batch, and freeze one of the loaves. It thaws well. Very very good. Have made it at least 9 times now.

Chocolate Zucchini Bread

Ingredients

  • 1c (125g) flour
  • 1/2 c (41g) unsweetened cocoa powder
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp espresso/coffee powder (optional)
  • 3/4 c (135g) semi-sweet chocolate chips
  • 2 eggs
  • 1/4 c (60ml) vegetable oil
  • 1/3 c (80g) plain Greek yogurt
  • 2/3 c (135g) granulated sugar
  • 1 tsp vanilla extract
  • 1 and 1/2 cups (180g) shredded zucchini (no need to blot, unless frozen)

Directions

  1. Preheat oven to 350°F (177°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk flour, cocoa powder, baking soda, baking powder, salt, and espresso until combined. Mix in the chocolate chips. Set aside.
  3. In a medium bowl, whisk the eggs, oil, yogurt, granulated sugar, and vanilla together. Slowly pour wet ingredients into dry ingredients and whisk to combine. Fold in the zucchini. The batter should be very thick.
  4. Bake for 45–50 minutes, loosely covering with aluminum foil halfway through to prevent the top from over-cooking. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs (although, having chocolate chips might streak chocolate on the toothpick!). All ovens vary, so begin checking around the 45-minute mark.
  5. Remove bread from the oven and allow to cool in the pan on a wire rack for 1 hour. While it’s still warm, press a few more chocolate chips into the top; this is optional and only for looks.
  6. Remove bread from the pan and place the loaf directly on a wire rack to cool completely.
  7. Cover and store at room temperature for up to 5 days or in the refrigerator for up to 1 week.

Success: Chocolate Peanut Butter Cake [omg]

Sunday, March 3, 2024

It's not the most beautiful cake, due to less-than-viscous-enough chocolate ganache, but it is absolutely delicious.

Chocolate Peanut Butter Cake

This is SmittenKitchen's Peanut Butter Cake. It is very effortful (lots of refridgerating cycles) and very intense. We ended up getting 16 slices out of it, most of which are in the freezer. Individual slices thaw *beautifully*.

'Would make again, if I want to spend 4 hours on a delicious cake with weeks of cake leftovers!

Success: Chocolate Chip Cookies [omg]

Sunday, June 12, 2022

The recipe is 'The Best Chocolate Chip Cookie Recipe Ever' from Joy Food Sunshine. And while I may not be willing to say it's the best chocolate chip cookie recipe ever, I do really like it and find it better than the Tolhouse on-the-bag recipe. A half cup more sugar, 0.75 cup more flour, a bit of baking powder to go with the baking soda, and twice the vanilla extract!

Chocolate Chip Cookies

When cooked in the toaster oven from frozen, it makes a very delightfully, chewy-interior cookie with a good amount of chocolate.

Chocolate Chip Cookies

As always, a full batch of cookies makes a lot. So I flash freeze the [several] spare dozen on a sheet pan, and then transfer to a zip-loc freezer bag so that I can whip up some homemade cookies in no time.

Chocolate Chip Cookies

Recipe

Good to hold onto for future use...

Ingredients

  • 1 cup salted (or unsalted) butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 tsp vanilla extract
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp sea salt (use a bit more if using unsalted butter)
  • 2 cups chocolate chips (or chunks, or chopped chocolate)

Instructions

  1. Preheat oven to 375 degrees F. Line a baking pan with parchment paper or silicone mat.
  2. In a medium bowl, mix: flour, baking soda, salt, baking powder.
  3. In a mixter, cream together butter and sugars until combined.
  4. Beat in eggs and vanilla extract until fluffy.

Magic Apple Cobbler Recipe

The last of the local baking apples are in this magical cobbler! Out of the four apple baked goods I've made with these apples (apple crisp, apple brown betty, apple honey cake, and apple cobbler), this Smitten Kitchen Magic Apple Plum Cobbler (recplacing all plums with apples) has the best effort-to-satisfaction ratio.

Magic Apple Cobbler Recipe

The only real modification I made was to use only Empire Apples, as I made the recipe in early March and that is definitively not stone fruit season! Works very well with just apples. I think it might've been a bit under-baked, but since we always microwave our slices of this cobbler for 25 seconds or so, I'm not overly worried about it. I prefer slightly underbaked to over baked. Next time, I'll put some foil on top halfway through so that I can cook it a little longer without burning the top.

Homemade Honey Vanilla Marshmallows

I have made these vanilla honey marshmallows one million bajillion times since I first posted about them...ten years ago, lol. They're easy, they're delicious, they're impressive, and they're even better toasted over a fire. Now that we harvest our own honey, it works out even better!

It's time for me to put together the adaptations I've made to the original recipe from Joy the Baker.

Homemade Honey Vanilla Marshmallows

Homemade Vanilla Honey Marshmallows

Ingredients:
  • 2x 0.5c cold water
  • 3x 0.25oz packets unflavored gelatin
  • 1.5c sugar
  • 0.25c honey (good quality! wildflower is better!)
  • 2/3c light corn syrup
  • 0.25tsp salt
  • 2 tsp vanilla extract
  • half a vanilla bean, seeds scraped out and reserved (if no vanilla bean, add an extra tsp of vanilla extract)
  • 1/3c cornstarch (powdered sugar can be used, in a pinch)
  • 1/3c powdered sugar
  • Candy thermometer (!!!)

Directions:

  1. In a small bowl, mix together the cornstarch and powdered sugar.
  2. Spray a 9x13" baking pan with non-stick cooking spray, and coat with the starch-sugar mixture.
  3. Pour 0.5c cold water into a stand mixer bowl with a whisk attachment.
  4. Empty the three gelatin packets over the water, and let sit for 10 minutes.
  5. In a medium saucepan over medium heat, bring sugar, honey, corn syrup, salt, and remaining 0.5c cold water to a boil. Stir to dissolve the sugar.
  6. Using the candy thermometer, bring mixture up to 240 degrees Fahrenheit. Do not stir, just get it hot hot hot! This may take a bit of waiting, be patient!
  7. When the sugar is 240 degrees F, turn the mixer with the gelatin and water on low speed.
  8. Carefully stream the hot sugar mixture into the bowl as the whisk moves slowly. Be careful not to pour into the whisk and spatter the hot sugar all over the sides of the bowl!
  9. Gradually increase the speed of the mixer until you’ve added all of the hot sugar mixture. Beat on high for several minutes until a thick, fluffy, white marshmallow batter has formed (~8 minutes).
  10. Add in the vanilla extract and vanilla bean and beat for another 2 minutes.
  11. Spread the marshmallow mixture into prepared pan and smooth with a clean, wet spatula to prevent sticking. Do not attempt to get all of the batter out of the bowl. It will not happen. It is very sticky.
  12. Dust marshmallow with cornstarch and powdered sugar mixture and let set for at least 4 hours (preferably overnight).
  13. When set, remove marshmallow from the pan and place on a large cutting board coated with a dusting of the cornstarch and powdered sugar mixture.
  14. Use a pizza cutter, coated with non-stick cooking spray to slice marshmallows.
  15. Once sliced, toss the cut marshmallows in the cornstarch and powdered sugar mixture and store in an airtight container for up to one week.
  16. Note: Clean-up is far easier with quite hot water!

Homemade Honey Vanilla Marshmallows

A Better Microwave-able Marshmallow:
If you'd like to make s'mores without a fire, and use your microwave instead, we've found these steps to be handy:

  1. Follow the above instructions for making the marshmallow, but instead of heating to 240 derees, only heat to 230 degrees. This produces a much lighter marshmallow that melts very quickly over a fire, but actually tastes better untoasted than the recipe above!
  2. When set & cut, you can heat up a graham cracker and chocolate in the microwave for ~25 seconds. Add a marshmallow to the top and heat for an additional ~5 seconds.

Homemade Honey Vanilla Marshmallows

You can really start to see the vanilla bean flecks there!

Mozzarella-Sausage Pasta

This is not the first time I've made TheKitchn's Kitty’s Bocconcino and Sausage Pasta Quick Weeknight Meal, nor will it likely be the last. It is not an 'omg' for flavor, but for a combination of flavor and ease. Good enough, simple enough to make several times over my lifetime. Although, I do recommend quadrupling the original recipe.

I think what I like about this recipe, aside from being easy, is the subtle flavors added by the cinnamon. It's a lovely touch.

Mozzarella-Sausage Pasta

Here's the BYOV take on it all:

BYOV's Mozzarella Sausage Pasta

Makes about 7 servings.

Ingredients:

  • 8 Italian sausages, casings removed (I prefer sweet, but hot will work. Heck, even pre-cooked chicken sausages will work!)
  • 4 Tbsp olive oil
  • 2 chopped yellow onions (or 1 onion + 2 garlic cloves)
  • 28oz can whole peeled tomatoes (I often use 2 jars of my homemade chopped tomatoes instead)
  • 4 Tbsp tomato paste (honestly, an entirety of one of those little cans is the way to go here)
  • 1/8 tsp red pepper flaes (up to 1/2 tsp, depending on spiciness preference)
  • 1/2 tsp cinnamon (no more!!)
  • Salt and pepper to taste
  • 2 chopped green peppers
  • 2 cup mozzarella, cut into bit-sized pieces
  • 1 cup chopped basil
  • 4x 12oz packages of Spaghetti
Directions:
  1. Prepare noodles according to package instructions to al dente. Salt the water!
  2. Heat a LARGE skillet over medium high heat with a couple Tbsp olive oil.
  3. Add the sausage, using the tip of a spatula to crumble while it browns. Once brown, remove to a plate.
  4. Toss in the onions (add more olive oil, as needed).
  5. When the onions begin top turn translucent, add in the green peppers. Saute until onions have a light caramel tint and peppers are cooked through.
  6. Add tomatoes, and break them up with a spoon as needed. Add tomato paste, and spices as well.
  7. Add the sausage and noodles. Mix.
  8. Just before serving, stir in the mozzarella and basil.

Double Chocolate Chip Cookies

After the last underwhelming chocolate peanut butter cookie, I decided to try again, this time with more emphasis on CHOCOLATE. I did this double chocolate chip cookie recipe from AllRecipes, but swapped 1/2c brown sugar for 1/2c white sugar, and cacao nibs for the walnut chunks. And then...I didn't over cook them!

They came out more perfect than any cookie I've ever baked in my life. Crisp exterior, gooey interior, the chocolate chips still (still!) melted. These are fantastic. I may live off of them as actual cookies, rather than frozen cookie dough. Everything I've ever wanted in a cookie.

Double Chocolate Chip Cookie Dough

Almost a brownie. Fantastic. Something tells me I am going to go through a lot of cocoa powder.

Double chocolate Chip Cookies

Ingredients:
  • 1c unsalted butter, softened
  • 1c white sugar
  • 0.5c brown sugar (sugar proportions can change, just have 1.5c)
  • 2 eggs
  • 2tsp vanilla extract
  • 2c all-purpose flour
  • 2/3c cocoa powder
  • 0.75tsp baking soda
  • 0.25tsp salt
  • 2c semisweet chocolate chips
  • 0.25-0.5 c cacao nibs or chopped walnuts (Optional)

Steps:

  1. Preheat oven to 350 degrees F.
  2. In large bowl, beat butter & sugar until light and fluffy.
  3. Add eggs & vanilla. Stir until combined.
  4. In a separate bowl, combine flour, cocoa powder, baking soda, and salt; stir into the wet mixture until combined.
  5. Mix in the chocolate chips and cacao nibs/walnuts.
  6. Drop by rounded spoonfuls onto ungreased cookie sheets.
  7. Bake for 8 to 10 minutes in the preheated oven, or just until set. Do not overbake!
  8. Cool slightly on the cookie sheets before transferring to a plate or wire racks to cool completely.
  9. If cooking from frozen cookie dough balls: Set the dough balls onto an ungreased cookie sheet to defrost a bit while the oven heats up. Bake for 10-11 minutes, or just until set.

Squash Hash with Kale and Baked Eggs and Chicken

This here is a delicious and very filling spin on Martha Stewart's Squash Hash with Kale and Baked Eggs. I dropped the cilantro, pre-cooked the butternut squash halves (so I already have a half cooked leftover!), cooked 1lb ground chicken just after the onion and garlic, and then sprinkled a bit of crumbled bacon on top at the end. The sweetness of the butternut squash is well-balanced by the carrots and kale. Highly recommend.

One more way to use up those garden squashes! Very colorful, too. Makes about 4 meals. Might be worth doubling.

Squash Hash with Kale and Baked Eggs and Chicken

Ingredients

  • 1/4 cup + 2 Tbsp extra-virgin olive oil
  • 3 Tbsp lemon juice
  • Salt & Pepper to taste
  • A couple teaspoons of a spice mix (I like za'atar)
  • 1 small onion, minced (1c)
  • 2 cloves garlic, minced
  • 1/2 medium butternut squash or 1 whole acorn squash (1.25lb), halved, seeded, peeled, and cut into 1/2-inch pieces (3.5c)
  • 10oz carrots, peeled and cut into 1/2-inch pieces (1.5c)
  • 2 cups packed coarsely chopped kale (from 1 small bunch)
  • 4-6 large eggs
  • 1lb ground chicken
  • Optional: a couple pieces cooked bacon, crumbled

Recipe

  1. Preheat oven to 425 degrees.
  2. Heat a couple Tbsp olive oil in an oven-proof skillet over medium-high. Cook onion & garlic for ~3 minutes, stirring occasionally.
  3. Add chicken, stir occasionally until cooked.
  4. Add squash and carrots. Transfer to oven and cook until golden and tender, 20-25 minutes (less if squash is already cooked and carrots are diced)
  5. Whisk 0.25c oil, lemon juice, salt, pepper, and spices (if any).
  6. Stir kale into squash mixture, along with half the oil/lemon/spice mixture. Return to oven for 7 minutes more.
  7. Make 4-6 wells in cooked vegetables and crack an egg into each. Return to oven until whites are set but yolks are still runny (4-6 minutes).
  8. Remove, drizzle with remaining oil/lemon/spice dressing (and bacon, if using).

Tomato Tart, Pear Tart

Back when I was making delicious tomato tarts with the garden's summer heirloom tomatoes, I also made this Pear Custard Tart from DinnerAtTheZoo. 'Was craving something carby and sweet, and this tart is rather easy, and plain but it does the job. Nothing that's going to blow your mind, but it's so simple to put together and not terribly unhealthy, that it might be good for the future cooking arsenal.

I believe you could swap most any fruit for the 4 pears. That might be worth an experiment...

Pear Custard Pie

It seems this recipe may be a Martha Stewart original. I made the pear custard pie a second time using the Martha recipe. It's pretty much the same easy, tastiness, but with one fewer pear.

Recipe: White Bean Soup with Crumbled Bacon and Spiced Brown Butter

Friday, December 7, 2018

This White Bean Soup with Crumbled Bacon and Spiced Brown Butter from HowSweetEats is everything I've ever been looking for when making bean soups in the past. It is absolutely fantastic. I'm a fan, even without the bacon, but bacon always amps up the awesomeness of a soup. The spiced brown butter is a really nice touch, too, and has me considering 101cookbooks' Green Lentil Soup with Curried Brown Butter.

One modification: always double (or quadruple!) this soup batch, it freezes super well.

Will absolutely make again.

Edit 2/8/2022: I decided to include the [quadrupled] recipe here, just so I don't lose it!

White Bean Soup w Bacon and Spiced Brown Butter (x4)

Makes 11-12 2-cup servings.

Ingredients:

  • ~16 slices of bacon, chopped [one packge]
  • 4 onions, diced (I've also made the soup without onions, it's also fine)
  • 8 garlic cloves, minced
  • 2 tsp dried basil
  • 2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes
  • 8x 14oz cans cannellini beans drained and rinsed (or a mix of bland-flavored beans, like garbanzo)
  • 96 fl oz chicken broth (or any broth...or some broth and some water) [12 cups]
  • 1 tsp salt (optional)
  • 0.5-2 cups half and half (optional)

Spiced Brown Butter:

  • 2 sticks unsalted butter [16 Tbsp]
  • 1 tsp curry powder
  • 1/4 tsp ground cardamom [4 pinches]

Soup Instructions:

  1. Heat a 7qt pot over medium heat and add the bacon - cook until crispy then remove with a slotted spoon and place on a paper towel.
  2. Add the onions and garlic to the pot and stir in the basil, pepper, and crushed red pepper flakes. Cook until the onions begin to caramelize (15-20 minutes).
  3. Stir in the borth and the beans. Bring to a boil, then reduce to a simmer and cover. Simmer for 20 minutes.
  4. About ~10 minutes before time is up is a good time to start making the spiced brown butter.
  5. After 20 minutes, use an Immersion Blender to puree the soup completely.
  6. Optional: Season with the salt and stir in the half and half right before serving.
  7. Serve topped with the crumbled bacon and a drizzle of the spiced brown butter.

Spiced Brown Butter Instructions:

  1. Heat the butter over medium heat in a saucepan, whisking constantly.
  2. Cook until the butter bubbles and brown bits appear on the bottom (4-5 minutes_, and then quickly stir in the curry & caramom and remove from heat.
  3. Whisk for another 10 seconds.
  4. Drizzle the butter on the soup before serving.

These Chocolate Chip Meringues from SmittenKitchen are heaven. Like a chocolate chip marshmallow without all the effort of a marshmallow! The perfect chocolate-chip-delivery system. Because it's a meringue, you don't end up with tons of batter, so you've got a manageable number of heavenly cookies to eat.

The recipe provides a "traditional" long & low cooking method along with the speedier one. I went with the 25 minute speedy version and they came out slightly crunchy, but mostly chewy. A perfect texture.

A perfect cookie.

Broccoli Cheddar Soup

This broccoli cheddar soup from SmittenKitchen is fantastic, but you really need to make a double batch. It only makes about 4 helpings, which is just too much effort...and soup should be pretty easy to mass produce. Next time!

Also, I'm pretty sure you could double the proportion of carrots and you'd still be at delicious level. In case sneaking carrots into your diet is a side goal.

This one's a keeper.

[Edit: Have since made this soup a second time as a double batch. It should be noted that if you're going to amp up the vegetables, cheese also needs to be increased.]

Time for a little wedding-review break! 'How about a 9 day trip to Hawai'i Island, with a detour to O'ahu?

Lava Lake in the Halema'uma'u Crater
Truth be told, our flight across to Hawai'i was delayed 4 hours, so we arrived at a ridiculous (to our jet lag) hour. And spent our entire first day under a rented beach cabana. The next day was spent on a 1.5 hour drive through the island to the Hilo side where we saw an orchid garden, and Volcanoes National Park. We walked througha giant lava tube, poked around Desolation Trail, and viewed quite a bit of cooled lava rock. There were also the Pu'u Loa Petroglyphs.

At night, we headed to the Jaggar Museum to see the Kilauea volcano. The lava lake isn't usually visible, but we were so lucky. With J's binoculars, you could actually see the splashes of lava. To see a lava flow up close you can head through the park to Holei Sea Arch and then hike 5 miles on a gravel road. Or you can come from the other direction (Kalapana) and rent mountain bikes from the local entrepreneurs. We didn't have time to do it, but it would've been super cool to see a lava flow up close.
