A non-caffeinated, refreshing (and cheap!) party pleaser. Perfect for when you need to feed a crowd, but don't need to booze 'em. And, as indicated by this
recipe inspiration from LowCarbYum, it's a rather loose recipe. I've recorded what I did this time that worked out well.
Cucumber Mint Water
Ingredients:
- 1 cucumber per 2 quarts of water (we used 3 cucumbers)
- 2 quarts cold water (we tripled the recipe)
- Handful of mint leaves
- Half cup mint tea (optional)
- 1/4c lemon juice (optional)
Directions:
- Slice cucumber thinly.
- Muddle the mint (I smash it in a mortar & pestle)
- Combine water, sliced cucumber, mint leaves, mint tea, and lemon juice.
- Refrigerate for at least an hour. The longer it rests, the stronger the cucumber flavor (and the browner the crushed mint leaves)
- Enjoy!

Yeah, this is a perfect summer drink. I've done this sans lemon juice (sometimes with lime instead) and it's very refreshing.
