I'm not exactly sure what went wrong with this Olive Oil Lemon Cake from Gourmet, but I finally broke down and bought a hand mixer afterward. I used a full lemon's zest and juice, but forgot to swap out and equal quantity of liquid from somewhere else. Additionally, hand beating the eggs just was not working. Overall the cake was too eggy, and we ended up throwing half of it away. Which is a shame, since it received rave reviews all over the place.
[Edit 10/1/09: I eventually remade this recipe with a hand-mixer and it came out delightful. It makes a nice 'breakfast cake'. Highly recommend.]
