I was going to make kale mashed potatoes for my department holiday potluck party, until I realized that our offices don't exactly have heating facilities. Cold mashed potatoes aren't particularly appetizing. So. Mom's German pasta salad it was.
Recipe
Ingredients
1 box of medium shell noodles (not the tiny ones, no the jumbo stuffing shells)
~ 10-12 oz Miracle Whip (NOT mayonnaise. Use Miracle Whip!)
1/2 of a chopped onion
1/2c chopped celery (about 2 big stalks)
4 hard boiled eggs, chopped fine
1/2 tsp salt
1/4 tsp pepper
Directions
- Cook the noodles according to the package: firm not gooey.
- Meanwhile, hard-boil the eggs.
- Mix warm noodles with all ingredients immediately after cooking (the hot noodles absorb flavor better). If possible, mix the eggs in when they are warm too: the yellow yolk will color the salad nicely.
- Refrigerate.
This makes a lot of servings...

I've never tried pasta salad but this looks really delicious! Much better than anything I could ever hope to make for a potluck!
I'm always kinda leary of putting Miracle Whip in a "salad"...but it works out okay here ;)
