Orecchiette Pasta & Roasted Chickpeas with Kale & Smoked Paprika
Blue Apron always makes a fantastic pasta dish. Adding roasted chickpeas to this Orecchiette Pasta & Roasted Chickpeas with Kale & Smoked Paprika, which are pretty easy to make, was a super lovely touch. This made 3-4 me-meals.

Chicken Fried Chicken with Baked Sweet Potato & Collard Greens
The Chicken Fried Chicken with Baked Sweet Potato & Collard Greens was also pretty good. I don't mind breading chicken as much when Blue Apron sends it. Although, there's always more than enough batter for the 2 chicken breasts. 'Gotta remember to keep some spare chicken breasts on hand.

Steak & Eggs with Quick Kimchi Fried Rice
The only reason the Steak & Eggs with Quick Kimchi Fried Rice is in third place this week is because I slightly overcooked the steaks. The meat is usually of high quality, but you sorta lose that when you cook to well done. Pink in the middle is sorta super necessary! The kimchi-fried rice was brilliant though. A nice twist on fried rice.
