I have found the solution to January. Or rather, I have discovered someone else's solution to January and it involves tasty food. ...and it does not involve waiting two days.
While potentially a very beige dish, SmittenKitchen's Baked Potato Soup is flavorful and warm: everything needed to thaw some small piece of the endless bleakness that is January (or February). Finish this off with a warm dark chocolate brownie-from-a-box, and you have yourself a giant calorie-laden fest you won't burn off 'til spring...and the contentedness to go with it.
As a bonus, this baked potato soup recovers from refrigeration and freezing quite well (likely due to the minimal amount of dairy it requires).

This is hysterical. We almost, almost made this exact recipe tonight. We have all the ingredients, so it will definitely be made later this week. I'm glad you liked it! We did make her homemade Oreos. So good...
Haha. I think soups just sort of scream "WINTER" and SmittenKitchen is the best...for just about everything.
