'Makes ~3 meals' worth of leftovers, especially if you end up with a 1.25lb package of sausage like I did.
Black Bean Chili
Ingredients1 lb sweet Italian turkey sausage, casings removed
2 cans of black beans (slightly drained)
1 8-oz can tomato sauce
8 oz beef broth (made from a bouillion cube, or from can)
1/2 to 3/4 cup carrots - diced
1 onion - diced
2 large bay leaves
- Brown the sausage, and drain the fat.
- Add all remaining ingredients in.
- Turn heat down and simmer for 45 minutes
- Hand smash the chili in the pan - getting the black beans to thicken the sauce.
- Cook for another 15 - 20 minutes, remove the bay leaves and serve.
