Success: Turnip Mashed Potatoes with Kale & Bacon

Sunday, October 14, 2012

We babysat some friends' CSA the other weekend and ended up with potatoes, turnips, bok choy, baby lettuce, onions, rhubarb, a pumpkin, huckleberries, and fresh eggs. And then, I turned much of that into this:

I would say I followed Paula Deen's Turnip Mashed Potatoes recipe, except that I used equal parts potatoes and turnips, used 2% milk instead of cream, halved the butter & sour cream, and added leftover bacon and garlic-y kale as an afterthought. So, in the end the final product is nothing like Paula Deen's recipe. But it is a start.

And it's pretty much an entire meal in one amorphous potato-y blob.

P.S. I love butter.
